잡채 Japchae is a staple dish at most Korean gatherings. The dish originally debuted in the late 17th century when one of the king’s court staff, Yi Chung, made the dish for a royal banquet. It was originally a mix of vegetables and mushrooms. The king apparently loved the dish, and gave Chung a huge promotion and made the dish mainstay in royal feasts. It eventually became a well-loved dish throughout the country. With the widespread use of various ingredients to Korea including sweet potatoes in the 19th century and starch noodles in the 20th century, Japchae evolved to include the starch noodles that we typically associate the dish with today.
