Sam Kyup Sal (삼겹살구이) - Pork Belly Korean BBQ | Meal Kit


Sam Kyup Sal by Song Cooks 

Cooking time: Approx. 15 mins (including time to pre-heat the grill or pan)

Cooking Instructions by grill:

  1. Preheat grill to medium-high heat.  Best to avoid sections of grill with open flames (but this might perhaps be debatable). 
  2. Apply strips of pork belly to grill. 
  3. After a few minutes, when desired char is achieved, flip pork pieces to other side. 
  4. Cook for 2-3 mins.  
  5. Remove from heat and serve. 
  6. Best to cut pieces after removed from grill. 

Cooking by pan: 

  1. Preheat pan to medium high heat.  
  2. Apply strips of pork belly to pan.  You may need to cut the pork pieces to fit, depending on the size of your pan.
  3. (optional for pan frying: add a touch of cooking oil to pan if desired.  There might be spatter, so a spatter guard is recommended.)
  4. After a few minutes, when desired char is achieved, flip pork pieces to other side. 
  5. Cook for 2-3 mins.  
  6. (optional: cut pieces to smaller size, if desired)
  7. Remove from heat and serve. 
  8. Optional: Some like to use the hot pan and oil to sautée some garlic, onions, kimchi, or even to make fried rice.  It’s an easy way to add kimchi fried rice to your meal in only a few more minutes.   

 

Samkyupsal or Ohkyupsal literally translates to three layer or five layer meat.  It describes the stripes of layers that can be seen from the cross cut pieces of meat.  There is no seasoning to our pork belly.  We include a handful of condiments that could be enjoyed in any combination with each piece: sesame salt, seasoned brined shrimp (very salty) and ssam jang (a seasoned paste of fermented soy beans).  Enjoy the pork on it’s own, with rice, or in a lettuce wrap.
