BY SONG COOK'S
Kalbi is a popular type of Korean BBQ that uses beef short ribs marinated in a sweet sauce that can be enjoyed on its own or wrapped in leafy greens. Prepare over a BBQ of stove-top grill for best results.
Some historians believe that Koreans descended from the Maek, a nomadic society who left central Asia to travel east. Because the Maek moved around a lot, they seasoned their meat before cooking to cut down on preparation time. This was a dramatically different approach from traditional Chinese cooking that tended to season meat after cooking and the concept for Korean BBQ was born.
