Kimchi is the national food of Korea and considered a superfood with lots of probiotics. It is a side dish of often spicy fermented vegetables that is served alongside Korean cuisine worldwide. Kimchi is best served cold, but can be flash cooked on a grill or in a frying pan for a little char.
There are dozens of varieties of kimchi made with all sorts of different vegetables. The two most common varieties are cabbage and radish.
Traditionally, Kimchi is stored under the ground in large earthenware jars. This accomplishes two things: 1. It prevents it from freezing during the winter months and 2. Keeps it cool during the summer months.
